Rick Bayless Baked Beans and Other Things

While I continue trying different sous vide recipes I meet this week’s pot luck assignment with a great baked beans recipe to go with our BBQ chicken on the grill, yes our weather has finally reached a tolerable level of grilling weather outside for a change.  I chose a Rick Bayless recipe and so easy to put together for a comfortable dinner night on the porch at last.

So we begin with a simple, quick BBQ sauce that I happened to cook along with the chicken as it sat for 1 1/2 hours before it hit the grill and of course you can use your favorite sauce or store-bought BBQ sauce…hey think of it this way, sous vide it and no messy splatters of sauce in the pan or on the range top.  I used 1 can of pinto beans in mild chili sauce and cannellini beans.

Baked Beans Ingredients:
1/2 large green or red bell pepper, cut in small pieces
Two 15-ounce cans pinto beans or navy beans, drained and rinsed (or 3 to 3-1/2 cups home-cooked pinto or navy beans well seasoned with salt)
1 cup barbecue sauce, store-bought or homemade
1/2 cup water or bean cooking liquid if using home-cooked beans
2 Tbsp dark brown sugar
1 Tbsp Worcestershire sauce

Toss everything into your baking dish and bake…45 minutes at 375º

Sous Vide BBQ Chicken:

Make your favorite BBQ sauce or use a favorite bottled sauce, place in a sous vide bag, sealed, but not necessary to get all of the air out as it will sit behind the chicken which will weight it down.  Next cut up your chicken into 10 pieces or in my case 5 for 1/2 half of a chicken…easier, buy the chicken parts and season them with your chosen seasonings or BBQ spice rub and get the air out and seal the bag, I marinated for a few hours in the refrigerator, certainly can be made ahead.  Heat the sous vide bath to 160º and place the sauce and the chicken bags into the bath, clipping the bag to the side of your “tub”…it will remain in the bath for 1 1/2 hours.

have your grill ready to grill your chicken and brush with sauce, turning often to crisp up the skin and get some char or grill marks on the chicken pieces.

Enjoy with a potato side or a fantastic Mac and cheese, have a party!
