Italian Wedding Soup for an Impromptu Dinner…

What a fantastic soup for a rainy day or so we thought it would be earlier and still might be later in the afternoon, we shall see, but in the meantime to start with I made turkey & homemade sausage meatballs for now and some for later. I always have previously on frozen homemade chicken stock so I used that, but find a fantastic stock at your store for your wedding soup.

You might have a meatball recipe that you love, but if not take a look around to adopt one that you like.  The Meatball Shop has several recipes…

The only thing left to do is to chop a few chicken soup worthy vegetables to sauté and gently simmer in the broth along with several meatballs…or 4 minutes in the Instant Pot with a natural 10-minute release.  Great on a buffet on the keep warm setting.

*Choose leafy spinach or escarole to toss into the hot broth and wilt down for a few minutes 5 minutes before serving.
*Serve with grated cheese of choice, a garden fresh salad, and a plate of fresh figs, cheese, and dark chocolate pieces for dessert.
