Split Pea Soup with Ina, or Almost Ina’s

Never a pretty bowl of split pea soup but certainly a delicious bowl of comfort soup…Pot Luck and green-ish Sunday soup time is perfect for a chilly gloomy day at our house just because Mike loves it and it doesn’t take much time for me to put together with just a little planning ahead for all of the ingredients. I didn’t make any major changes to Ina’s recipe (link below), but I did add about 2 teaspoons of Vegetable Better than Bouillon and 1 1/2 – 2 cups water to finish my soup to the consistency that I prefer as it was getting too thick. I always like more carrots and the recipe can easily be halved keeping an eye on the liquid level so as not to burn. Yes, stirring for some of the finishing time is recommended.

We happened to have fresh kielbasa links so Mike grilled those to add to the soup, very good but use whatever kielbasa you can find or sautéed ham cubes will work as well. I often use what I have in the fridge or freezer like crispy pancetta cubes of thin crispy prosciutto slices. Half of the recipe is enough for 4 bowls of hearty split pea soup served with Ina’s raspberry corn muffins…the cheater version in a pinch = 1 box Jiffy corneal muffin mix and 1 cup fresh raspberries.
