Sunday dinner is just around the corner so weekly planning a little ahead for this lovely traditional dish with a slight twist, grilled chicken cacciatore finished in a pan…one of my favorite dinners with a little side of macaroni of some kind, a great salad, and a nice loaf 5-grain garlic bread.
A fabulous feast for friends.
I took a peek at Giada’s cacciatore seasoning and made a small batch to try out, but strayed a bit and added a few touches of my own like 1/2 teaspoon of my favorite homemade sausage seasoning, a bit of granulated garlic, and a few fresh herbs…
I’ve made grilled cacciatore before and always is a very satisfying dish and perfect for an Italian Sunday dinner. So many really good recipes to choose from and I always start with the basics of my favorite versions, peppers, onions, garlic, fantastic tomatoes, and fresh herbs and of course below find a link to my recipe at Food52 that I made in the past, but of course find one that works for you and use grilled chicken parts for a bit of a twist.
Naturally, there are speedy options, frozen homemade or jarred sauce, frozen peppers and onions to name a few, and grilling the chicken saves the messy cleanup of stove-top sautéing.
I served the chicken with fresh sautéed green beans and some lovely saffron spaghettini.
