YaYa’s Fabulously Easy Individual Caprese


I often make Caprese salads of any kind and I have all of the ingredients on hand to make my fancy version tonight and take into consideration Giada’s dressing, oddly enough it also appears as my header photo…a little fun with food and to fulfill the weeks challenge it contains, yes, alfalfa sprouts and they are legumes for the theme of the week.

Rather than make my usual dressing Giada’s dressing is a perky lemon juice version rather than a vinegar version, nice change, and her lemon version will go nicely with my seafood dinner tonight. You don’t need to go crazy fancy for the salad, slices of tomatoes, cheese with torn basil leaves works, but heck I have the ingredients to make a fancy Monday salad again.

Giada’s Caprese Lemon Dressing from Everyday Italian

Makes 4 first-course servings
3 tablespoons fresh lemon juice (from about 1/2 lemon)
1/2 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
3 tablespoons extra-virgin olive oil

This recipe originally appeared in Everyday Italian by Giada De Laurentiis, Clarkson Potter, 2005.

Whisk the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Gradually whisk in the oil to blend.
