Gazpacho Shooters with 30 Rock Guac

imageOf course I don’t love totally puréed gazpacho therefore one must use a spoon for my version of Curtis’ gazpacho still and all sip-able if Guac is stirred into the shot glass or edged with seafood seasoning and served with a couple of dunkable steamed spicy shrimp draped on the edge.  I have made many versions of gazpacho over the years and haven’t found one that I haven’t liked.  Consider a bit of tequila in glass…do consider Curtis’s recipe that I posted a few weeks ago (link below), refrigerate over night adding more fresh veggies or chosen additions and keep chilled until serving time.  Sit back relax, serve wth margaritas bowls of chips and dips…

Curtis’s 30 Rock homemade guacamole
SERVINGS:Serves 4

1 large garlic clove, peeled
1  (jalapeno), roughly chopped
3 large ripe Hass avocados,  peeled, pitted, cubed
1/4 bunch chopped fresh cilantro
2-3 tablespoons fresh lime juice
Salt and freshly ground black pepper
2-3 tablespoons Mexican crema, sour cream or yogurt (optional)

In a large bowl, gently fold the avocados, cilantro, lime juice, jalapeños, garlic, and cumin together. Season to taste with salt.
