Oh, and that tomato carpaccio salad is perfect for a bit cooler evening weather dinner after “Erin” zoomed past us for parts unknown before she fizzles out!
Such an easy dinner and recipes to come, but check online for several versions of both… The salad is super easy; use what you have. I drizzled Balsamic Vinegar & EVOO, then I added gorgonzola just before serving, along with crispy garlic rubbed crostini for the soup and salad. What a treat with end-of-the-season fabulous tomatoes.
