End-of-summer tomatoes are some of the best tomatoes and I used a couple of different kinds and halved the recipe, slipped the mint, added pinches of Phillips seafood seasoning, and went light on the basil so as not to overwhelm the fresh crab that was added to the soup… Just a splash of dry vermouth if you like. Serve with a favorite side salad and a sparkling wine.
Jacques Pepin’s “Simple & Healthy Cooking ” inspired today’s light dinner… This was a nice change from our usual “crab soup” and is perfect for a light dinner on the porch.
