And then there is this… It has been a while since I showed up here; I’ve just been a tad busy and searching out easy comfort food dinners…
I manage to get a meal on the table at night, and foraging in the freezer, pantry, refrigerator, and fresh market stand pretty much dictates what goes into the pot at night, as in tonight’s comfort food night of Escarole and Garbanzo Soup. A nice bowl of hot soup and some great sourdough crostini is easy enough to accomplish and have ready, even if company shows up.

Not the curly Escarole, as much as you want
1 large shallot or a medium onion, chopped
2 fat cloves of garlic, roughly chopped
2 fresh bay leaves
pinches of Calabrian red pepper flakes
4 ounces dried garbanzo beans, or you can use canned. Dried beans take a while to cook, so keep that in mind and pre-cook them.
Fresh herbs, oregano, little bits of rosemary, and fresh parsley
Salt & Pepper to taste
My preference is Butcher’s Chicken bone broth (24 oz), but use your favorite chicken broth or stock
Parmigiana cheese chunks into the pot to melt into the cooking soup.
