Erin French of Lost Kitchen fame has a wonderful recipe for either a chicken or pork cutlet, I tried it with pork tonight and it’s a winner, I have only found the recipe on YouTube from the Today Show, but it is easy to follow and take notes. The crunchy cutlets ingredients have cornflakes, panko crumbs, and cornstarch for the breading, and add a bit of Dijon mustard and milk or cream to the whisked eggs. Erin used fennel pollen, which I did not have, but a few pieces of freshly ground fennel were perfect for the pork.
