The Best Tail Ends of the Farmer’s Market Basket

“Romaine Calm, It’s A Farmer’s Market”

So, Friday represents the end of the week for the veggie bin here before another trip to refill with the weekend’s freshest weekly selections. Since we are such big vegetable eaters I’m anxious to shop the bins, baskets, and market refrigerators knowing that corn is at the top of the list and I love the other surprises that await…
For today beautiful carrots, fresh big green onions, crispy celery, and a beautiful farm fresh tomato are front and center. Soups on, but it’s 92 degrees… so?

An Italian Pastina soup is always welcome; everyone makes it a little differently, but always use Pastina… As usual, I always have a good stock or bone broth on hand or in the freezer so just a little effort in the chopping arena, a nice chunk of parmigiana rind, and great seasoning fills the rest of the bill, and oh “chicken” if you’re like Michael. Leftover roasted chicken is a good choice as are grilled chicken pieces.
