Fabulous steaks on sale at the store and while I love a good rib eye steak Michael prefers a fillet and he brought home one each and to serve them with a side of roasted green beans, roasted red potatoes, and top the steaks with a lovely roasted tomatoes seasoned with garlic and thyme. I must say that I did a good job on those steaks just seasoned with lots of pepper, kosher salt and rubbed with a bit of olive oil, perfect medium rare and lots of seared juicy tomatoes over each steak. A pile of oven roasted green beans seasoned with grated parmesan, lemon zest, salt and pepper and smashed buttermilk red potatoes made for a great Sunday dinner or Valentine’s Day dinner.
I got my cast iron pan very hot (it is well seasoned) add and spread about 1 teaspoon EVOO add the seasoned steaks and sear over med high heat for 4 minutes or until you have a nice crust, turn and sear the other side and when done, carefully brown all of the edges of the steak. Chunky Smashed Buttermilk Red Potatoes
4 large red potatoes, quartered
Buttermilk, start with 3 tablespoons and add more for the consistency that you like (not completely mashed potatoes)
2 tablespoons butter
minced parsley
grated parmesan to taste
salt and pepper
Boil or steam the potatoes until tender, drain and put back into pan, toss in the butter, blend buttermilk and the rest of the seasonings…
I seared the tomatoes in a hot pan, add slices of garlic, salt, pepper, pinches of fresh rosemary and fresh basil. Don’t cook until they all pop open and turn to mush. Give the tomatoes a brief hot blast over high heat and deglaze with a little zesty Italian dressing. Pour over steaks and serve.
