To start the first week of June off a few easy meals are in order and you can’t get more “pot luck” than a quick dish made with Hugh Fearnley-Whittingstall’s Tupperware Mexican chorizo, and just a few of his examples Mexican meatballs, chorizo carbonara and sausage patties for sliders or burgers.  Yes, highly seasoned fresh chorizo without all of the work of his “real” chorizo.  I think that this quick sausage will be perfect in a Spanish style beans, greens and chorizo soup and a perky addition to a Spanish style garlic soup/sopa de Ajo….so I’ll be back with a few recipes that I come up with, but I’m liking all of his suggestions as well as a rainy night soup.

I suggest that once you have made the sausage blend take a small patty and fry it for taste test adding more cayenne for more heat, but since I want someone besides me to eat I stayed with the original amount.

Easy Tupperware Chorizo from River Cottage Everyday

1½ pounds pork shoulder, coarsely ground
1 tablespoon sweet smoked paprika
2 teaspoons hot smoked paprika
2 garlic cloves, finely chopped
2 teaspoons fine sea salt
1½ teaspoons fennel seeds
¼ teaspoon cayenne pepper
¼ cup red wine
Freshly ground black pepper
A little canola or olive oil for frying

Put all the ingredients except the oil into a bowl and mix thoroughly with your hands, squishing the mix through your fingers to distribute the seasonings evenly. Heat a little oil in a frying pan, break off a small piece of the mixture, shape into a tiny patty, and fry for a few minutes on each side, until cooked through. Taste to check the seasoning, remembering that the flavors will develop further as the mixture matures. If you’re a heat fiend, you can add more cayenne and black pepper. Cover the mixture and store in the fridge for at least 2 hours before using; this will allow the flavors time to develop. It will keep for about 1 week.

  1. I made Hugh’s tupperware chorizo last week and used it (the last of it) for Scotch eggs and they were delicious! Excellent recipe and so many possibilities!
