Something pretty basic from our childhood can send you on a bit of a sentimental journey, but ham salad, really? Yep and further stretching the use of leftovers is a simple version of the retro salad that I made the other day and certainly can be greatly adapted when you toss in some other favorite ingredients like green peppers and green olives with pimento. We had a few good sandwiches and had some with cocktails and cheese another night so I think it can be a great party/boating food easy and quick to toss together. If you don’t happen to leftover ham, go to the deli counter buy a good chunk of ham and with so many great ones out there do a little taste test first.
Ham Salad Ingredients…taste and adapt to your taste like more pickles etc.
1 pound or so leftover ham chunks
1/2 cup + Atomic spicy pickles, finely diced
2 ribs of celery peeled with a potato peeler to remove strings
1/2 medium Vidalia onion, finely diced
2 teaspoons Dijon mustard
2 teaspoons German mustard (Löwensenf)
1/2 cup Duke’s mayo more if you need more
Drizzle a little pickle juice into the salad as well…
salt and pepper to taste
Great with assorted crackers, rye or white sandwich bread.
Pulse process the ham chunks in batches if necessary not into a paste just small pieces or more like a fine shred and toss into a bowl. add diced vegetables, stir in may and mustards and season to taste.
