Women’s World Cup Quick Friday Ciabatta Pizza Sauce…and then Pavorotti

Every night is a celebration of some kind so today “National Donut Day”…scared ya there for a second, no donut pizza today, but we support and celebrate FIFA and Women’s world cup soccer, the women’s super bowl of soccer!

Don’t let the rain run you off on celebration pizza night when you can’t use the grill in the rain…your oven still works right?  I sometimes resort to ciabatta bread instead of a traditional crust and a quick tasty sauce and a quick freshly made pizza sauce is just the ticket with about a 20 minute cooking time, yep pizza in a flash…grab some of your favorite toppings and make a fabulous pizza parlor salad.  Short on prep and cooking time game night?  This is a fabulous solution!

My quick sauce:
1-28 ounce can San Marzano Whole tomatoes
4-5 minced cloves of garlic
a nice stem of fresh basil leaves, at least 8-10 leaves, thinly sliced
1/4 cup good EVOO
about 1/4 cup good red wine, it was Pinot Noir tonight
salt & pepper
a few red pepper flakes and 1 quarter cup shaved cheese
about  1/4 cup shaved cheese blend

I love to find my worst knife in the kitchen and kind of break down the tomatoes right in the can, get a nice large saucepan ready add the oil, heat slightly toss in the minced garlic, stir for about a30 to 45 seconds, stir and add the red wine to cook down for a minute or so.  Add the tomatoes and break up a bit more for a chunky sauce, season with salt, pepper red pepper flakes and toss in the fresh basil and the shaved cheese.  Bring up a good bubble and turn down to a low simmer for 15 minutes stirring often…make ahead and bring to room temp while your oven heats up.

Heat oven to 375º and toast for 7-8 minutes, a little tinge of golden on the edges, pull it out, sauce and decorate, bake until hot and bubbly, approximately 5 minutes, pull out, turn pan and finish with shaved cheese, melt the cheese a little…hot cheese, hot pizza…
By all means, salute the women with good red wine…enjoy the games ladies!
