YaYa’s Huli Huli Chicken

Seriously one of my favorite summer dinners goes Hawaiian with a fabulous platter of Huli Huli Chicken with grilled pineapple and scallions served up with additional “Huli marinade” and plenty of appropriate side dishes from the Islands…our favorite go with dish tonight, fried rice.

While there are plenty of recipes online I have a basic version that I adapt according to what I have in the house for the marinade, garlic ginger and soy sauce are the must have elements for the marinade and you can use quick easy additions if garlic and ginger from the tube if you don’t feel like mincing and grating. Most recipes call for a somewhat lengthy marinating time 6 hours + up to overnight, but that marinating time can be greatly reduced if you have a food sealer system especially that marinating container.

I take a lot of liberties with my marinade and taste as I go, but for a more accurate recipe take a look around for Huli Huli recipes and once you are used to the flavors in the marinade, you can tweak it to your liking…the ingredients that I had on hand today:

1/2 cup soy sauce
1/4 cup light brown sugar
4 cloves minced garlic or the equivalent of Gourmet Garden garlic from a tube
2-3 teaspoons grated ginger or the equivalent of Gourmet Garden ginger from a tube
1/2 cup pineapple juice
1/2 cup chicken broth
1/4 cup ketchup
1/2 to 1 teaspoon toasted sesame oil
1 tablespoon Asian fish sauce
1 tablespoon Worcestershire sauce
1 teaspoon Sriracha sauce
*Optional chopped green onions


You can save a little of the marinade to baste the chicken while grilling after the marinating time is up remove the chicken and simmer the remaining marinade for 10 or so minutes.

Whisk all of the ingredients, add your cut up chicken pieces, marinate for 4 + hours turning now and then, grill over medium high heat for 45 to 60 minutes, basting often with marinade.
