Fast food doesn’t need to be awful…

Once again a quick & easy recipe by Michael Symon for a fast food at home menu and a perfect one for a day when I attacked the veggie bin to use up a few things before replenishing for the coming week. A red and yellow pepper along with part of an onion and leftover brioche buns made for a great, easy lunch. Since I make my own sausage I always have plenty in the freezer or fridge for a quick meal ad this recipe did not disappoint. Great for a quick dinner as well served with a great salad or your favorite picnic sides.

Michael Symon’s Loose Sausage and peppers Sandwich, slightly adapted

Serves 4
3 tablespoons olive oil 1 pound sweet or hot Italian sausage, removed
from casings if not bulk
1 yellow onion, thinly sliced (about 1 cup)
3 garlic cloves, minced
1 red bell pepper, thinly sliced
Kosher salt
4 Italian/or brioche rolls, split and toasted


Put a large skillet over medium-high heat.
Add the olive oil and then the sausage and cook, stirring with a wooden spoon to break up the meat. Sauté until browned, about 2 minutes.
Scoot the sausage to one side of the pan. Add the onion, garlic, bell pepper, and a pinch of salt to the empty space and cook until the vegetables soften and begin to caramelize, about 2 minutes.
Stir to combine the sausage and the vegetables and cook for 1 minute.
Spoon the sausage and pepper mixture onto toasted buns or hoagie rolls and serve.


Note: I sautéed the peppers and onions first and then added the crumbled sausage to finish.
