Skillet Lasagna From “Keepers”

My perfect last meal would be shrimp cocktail, lasagna, steak, creamed spinach, salad with bleu cheese dressing, onion rings, garlic bread, and a dessert of strawberry shortcake.

So Thursday night was what I declared “skillet night” around here… I made a nice loaf of focaccia to serve with a yummy skillet lasagna easily made ahead and not as time-consuming as a full-on lasagna, perfect for a weeknight dinner. The focaccia dough is made the day before (18-24 hour rising time) and baked in the morning leaving plenty of time to collect the lasagna ingredients, prepare it to the point of just ready to finish the last 12 or so minutes, and rest for 10 minutes. I made half of the recipe for the two of us, and there was still a generous leftover portion… Perfect for Michael as I planned on having soft shell crabs for my dinner the night after and he is not a big fan of, good for me I’ll take two.

I had several changes to the original recipe including using my own homemade sausage, regular DeCecco lasagna noodles, fresh instead of dried herbs, and dashes of Italian seasoning.
