Hot days and a no-cook side dish to serve with a Sicilian-style grilled fresh tuna steak… Make early and serve chilled or at room temperature.

What began as a simple olive salad became all the goodies for a nice mixed side lettuce salad. Since it has all the necessary ingredients for a salad dressing as well, no need to make extra, unless you need more dressing.

Ingrdients
Halved “Sugar Bomb tomatoes or sweet grape tomatoes
1/4 red onion, diced
4 whole canned artichoke hearts, halved
1 fat rib of celery with leaves, diced
Pinches of fresh oregano leaves + pinches of Sicilian oregano
A few sprigs of chopped parsley, leaves only
Castelvetrano olives, crushed, as many as you want
pinch of Calabrian pepper flakes
1/2 cup EVOO
2 tablespoons Red wine vinegar
2-3 loves minced garlic, small
salt + pepper
oops forgot cucumber…

Toss together to blend and serve with freshly washed and chilled lettuce. It never can be a bad thing to squeeze a little lemon over all if you like.
