After a busy weekend and a little gardening Monday morning, a simple dinner was in order after a quick trip to the seasonal opening of the produce stand where I came away with some pretty nice Florida “home grown” tomatoes add a little arugula from the lettuce patch out in the garden and a freshly baked rosemary focaccia and we had the beginnings of a preview of summer to come filled with BLTs. Today I used crisp pancetta and prosciutto instead of the bacon and a little of last year’s fresh pesto that had been frozen in ice-cube form.
Lemon,Asparagus, and Sun-dried tomato Couscous salad went nicely with the sandwiches…
