I didn’t have to do much in the kitchen today because I made the soup for dinner last evening so I added two simple dishes to our meal…a cantaloup salsa and an applesauce cake with cinnamon maple cream cheese frosting. The salsa is light and refreshing that I served with cinnamon pita chips and some baked corn tortilla chips.
Simply cube as much cantaloupe and honeydew melon as you want, mine was about 1/2 of each melon, finely dice 1/2 red onion, 3 baby seeded red peppers, 1 medium-sized jalapeño, minced, zest of one lime and the juice. Chop some fresh cilantro, season with a little salt and drizzle about 2 teaspoons of honey over the salsa, mix, taste for and adjust salt and lime and chill until serving time.

Note for SK recipe, add a little real maple syrup to the frosting.
