At least one night a week these days we have a few neighbors over and we enjoy a few appetizers, a bottle of wine or other favorite beers and cocktails just another excuse to visit, catch up, the perfect excuse for none of us to cook dinner and we eat early. Tonight an old favorite reappeared on the menu, that good old-fashioned hoagie dip which is a perfect way for me to use up bits and pieces of cold cuts and cheese. A rather easy recipe and as you can see someone took a scoop from the bowl already!
The tale of the night was not an altogether funny one to me, but what are you going to do? The tray to carry out stuff just broke at the rivets when I picked it up, hoagie dip crashed to the floor, shattered and broke the bowl, but Michael’s’ precious store-bought bean dip stored in a sealed plastic container survived, Cheryl brought pimento cheese and saved the day. What is one going to do? All in all, it was just fine, but I hate bean dip 5,7 or any layer amounts, but that is okay we moved on. Hoagie dip redux any day now! Where is the emoji for crying?
I started with mixing up 1 batch of famous Good Seasons Zesty Italian dressing, but you will only need about 1/4 cup to add to your favorite mayo, 1/4 cup + a little more if you need it when the dip is finished.
I didn’t have hard or Genoa salami but I did have a small roll of European style peppered salami…I felt that it had too much pepper so I just removed a good part of the pepper and it worked out just fine.
1/4 pound fine diced salami
1/4 pound fine diced deli ham
8 ounces of sliced provolone, diced (I don’t care for the smoked provolone in the dip)
3 medium Campari tomatoes, diced
1/4 of a large red onion diced
iceberg lettuce leaves thinly sliced and diced (I used about 6 nice leaves, use more if you like)
A sprinkle of granulated garlic|
Sprinkles of Italian seasoning to taste/start with 1 teaspoon
salt and pepper
Toss all of the ingredients together and then add your dressing mix of mayo and Italian dressing, thoroughly mix, taste for seasoning, serve chilled with slices of French bread…Enjoy and have a nice time at your gathering…
