National Picnic Day…on the Porch

Life needs a few more polka dots and picnics

An absolutely beautiful day for a picnic, but alas we had a full day of stuff to do and I had my hands full planning and prepping a few meals for the coming week, so, yep, you got it, picnic on the porch with a new burger concoction that I dug out of the saved file and adapted for summer/spring grilling, something like a smokey ‘bama burger with bacon, cheese, and a white gentle smoky Alabama sauce.  The sauce will be a huge hit with Michael because he loves anything with mayo, me just a drizzle, please.

I’ve made Alabama white BBQ sauce before and I don’t recall the exact recipe, but they all seem to contain the same ingredients, mayo, sugar, lemon juice, cider vinegar and pepper I added a pinch or two of smoked paprika that just had a hint of smokiness as the burgers had plenty of smoky flavors.

For the burgers:
Slightly adapted from Hugh Fernley-Whittingstall Tupperware Chorizo
thoroughly blend and shape into patties

1 lb, ground pork, 2 lbs if not using optional veal
*Optional (1 lb ground veal)
a sprinkle of onion powder and granulated garlic, about 1/4 teaspoon of each
1 tablespoon smoked paprika
1 teaspoon chili powder
1/4 teaspoon cayenne pepper-I used less
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
splash of wine/white or red
crispy smoked bacon or pancetta for each burger
Slices of smoked Gouda or and mozzarella for each burger
Buttered or spread mayo sauce on buns brioche buns, and lightly grill
some favorite fresh greens for your burger

Hugh’s Chorizo Recipe

1½ pounds pork shoulder, coarsely ground
1 tablespoon sweet smoked paprika
2 teaspoons hot smoked paprika-really hot, consider reducing the amount
2 garlic cloves, finely chopped
2 teaspoons fine sea salt
1½ teaspoons fennel seeds
¼ teaspoon cayenne pepper
¼ cup red wine
Freshly ground black pepper
A little canola or olive oil for frying
