With the cooking clubs’ theme of the week, All-American, it wasn’t too difficult to find something quick and easy for a grilling out night, simple and comforting after a week of fabulous foods dining in and out…we start with a classic with a twist, a wedge salad with blue cheese like Ina’s, but cut into a disc, adorned with celery radishes, green onions and of course the required blue cheese of your choice all topped with a quick blue cheese dressing.
Secondly, who can go wrong with the all-American cheeseburger, pick any chef’s version on our list or go off on your own with your favorite beef mix, etc? I always start with a great custom ground beef blend of my own, but went simple today with a chunk of the mock tender roast, ground, seasoned, and shaped into 5-ounce patties. Be sure to toast the buns and top with all the goodies that make it an all American cheeseburger, lettuce, onions, tomatoes, pickles, or whatever you choose. I’m not a huge lover of cheese on my burger, very seldom add any and when I do
not very much, so my burger is not dripping with melted cheese, but Mikey’s is an I didn’t think it wise to snap a picture while he was biting into it with cheese dripping down his chin.
The mock tender roast made for fantastic beefy tasting burgers with the basic seasonings of salt and pepper instead of all of the “gourmet” shaker seasonings that have A-Z seasonings in one little which are not necessary for a great burger.
Ina’s Iceberg lettuce with Blue Cheese Dressing-Slightly adapted:
2-4 thick discs of iceberg lettuce about 1/2 to 3/4 inches thick
2/3rds cup Greek yogurt
1 tablespoon Sherry vinegar
2 ounces crumbled blue cheese of choice, I had gorgonzola on hand
salt and pepper
*Optional heavy cream to thin the dressing if necessary
another ounce of cheese to top your salads
Assemble one disc of lettuce on each plate, top with sliced celery, add some chopped green onions, slice a few radishes for the salads, and top with dressing and additional blue cheese…I had some tomato left from slicing a huge one for the burgers so I tossed that in as well. Add some croutons if you like, I made focaccia croutons, delicious.
