Ina’s Easy Make-Ahead Coq Coquilles Saint Jacques

Oh yes, a fine recipe indeed so perfect for a small gathering pot-luck dinner. It seemed like the perfect dish for a dreary rainy night, is a great make-ahead dinner, and can be baked while enjoying a cocktail and appetizer moment. Serve with a great salad of choice and of course, a nice warm baguette couldn’t hurt to sop up the creamy sauce.

I didn’t make any noticeable changes, but I did make only 1/3 of the recipe for two of us and that was more than plenty. I recommend the Patagonia scallops perfect for this dish available at Publix, in 24-ounce bags in the seafood freezer. Ina’s recipe link is below and also available on the NYT site…
