Breakfast, Lunch or Dinner Ranchero Eggs & Crispy Potatoes

I love huevos ranchero and today a little change made for a great breakfast or anytime dish. I didn’t have corn tortillas to crisp up and I made poached eggs instead of frying them. The sauce was pretty easy and since I had 1/2 of a large heirloom tomato, 1/2 a can of diced tomatoes, 1/4 of a white onion, a minced garlic clove and 1/2 of a green pepper…a good start and all well seasoned with chili powder, Mexican oregano, cumin, cilantro, and 1/4 cup of Roy & Pam’s pig pickin’ sauce. Sauté the onions and peppers for a few minutes to soften add the rest of the sauce ingredients and simmer for 15 minutes set aside while the potatoes crisp up in the Air Fryer. Lastly I made the poached eggs and placed them atop the individual plated crispy potatoes and the spoons over the ranchero sauce…oh so good and can be served with crumbled chorizo or patties. Yet another way to serve them, serve over crispy corn tortillas…Enjoy!
