Oh, happy freezer diving day for a simple appetizer and a quick lunch on a busy day. I found a 6-ounce package of smoked trout fillets and made an easy dip/spread for company casual dinner just grab a bag of bagel or pita chips, a couple of tablespoons of cream cheese, and Greek yogurt and you are well on your way for a nice treat to go with a seafood dinner.
It is always hit or miss with fish in this house with Michael not being the biggest fish lover, but I figured that if he eats the smoked salmon dips and spreads that I make then the trout recipe would fit right on the minimal salmon recipe list…with good reason he doesn’t get too enthusiastic when it comes to salmon as he says that he was “raised on the stuff” growing up in the Pacific Northwest. Now and then I serve a nice glazed salmon recipe and he is good with whatever version that included an Asian style and lately maple and brown sugar glazes. Success at last and he even suggested salmon one night soon.
Weekend tasty salmon spread:
Blend together about 2 tablespoons of whipped cream cheese
4-5 tablespoons Greek plain yogurt
1 teaspoon lemon zest
1+1/2 tablespoons freshly squeezed lemon juice
2-3 tablespoons chopped fresh chives
*optional 1 teaspoon minced capers
Flake the 6 ounces of trout with a fork, and thoroughly blend the rest of the ingredients. Toss the flaked salmon into a serving bowl and blend in the rest of the ingredients, chill, and serve with a bowl of chips. Pair with an appropriate wine or beer like a Pinot Grigio, pilsner, or citrus wheat beer to name a few.
