“Soup is a canvas for culinary creativity and exploration.”
A perfect day for a dive into the freezer and then a brief stop at the refrigerator, heard the veggie bin screaming, then back to the freezer for those two containers of previously made beef soup. A friend stopped by with zucchini, and I prepped the rest of the farm stand green beans, a few mushrooms, carrots, onions, and a couple of tomatoes. Fresh herbs from the porch planters, and we have the makings for a fantastic hearty soup redux… Or rather, second chance beef soup.
I added the soup to the small Instant Pot and proceeded to add the vegetables, herbs, and spices. I then sealed the IP, set it to the soup setting for 20 minutes, and voilà, dinner!
Serve with a salad and sourdough bread if you like.
