Emergency Taco Salad

My intention was to be extremely lazy come dinner time, but sometimes things just don’t “pan” out in the lazy department and I had to keep something going since the clock screamed 4:15 p.m. and no rescue in sight.  Michael was great about picking up a few things from the store while I prepped the quick add ingredients for a taco salad…the chili that I pulled from the freezer was not chili, but enchilada sauce/the label stuck to the shelf, after thawing I recalled a package of frozen ground beef so on with the now paused dinner prep.  Next, what no taco seasoning homemade or packaged, but I spied a package of chili spices and I still had the enchilada sauce for a well-seasoned liquid instead of water, good save!

What the flour tortillas were old and simply fell apart when I went to line the taco bowl mold, phone call for more.  So as I anticipated just tossing the requested salad goodies from the salad bar (lazy) in came bags of produce that needed to be prepped, well except the greens from the salad bar…I don’t get it.  So digging around for the tortillas I heard uh-oh I forgot them…despite it all we had a fine taco salad at around 6:15 or so and I caught up on DVR’d episodes of Victoria.
Despite the mini hurdles, dinner was very good and I believe with a few added touches including the rest of the ground beef I have a good start to a small pot of chili for the weekend…BONUS!

Enough for 3-4 taco salads

1 lb lean ground beef, browned and seasoned
1 can Red Kidney beans, seasoned with chili sauce, not drained of liquid
1.5 or so ounces of taco or chili seasoning
1 cup homemade enchilada sauce or mild canned or jarred enchilada sauce
10″ flour tortillas for baked tortilla bowls
all of your favorite taco salad goodies and enough mixed salad greens to fill two bowls
* cucumbers, radishes, red onions, sliced sweet peppers (assorted colors), grape tomatoes halved, your favorite shredded cheese or grated Mexican cheese, diced avocado or guacamole, a little pico de gallo, sliced olives…
Your favorite salad dressing for taco salad

To the browned and seasoned ground beef add the 1 cup of sauce and chili beans, simmer until slightly thickened and reduced.

I love the inexpensive taco bowl mold that make pretty baked taco bowls/4 for about 10 dollars.
