Happy Memorial Day…Pizza & Arugula Salad

When the skies open up and ruin your outdoor Memorial Day festivities, don’t fret, invite a couple of friends over and get together to make pizza…not much planning for one when everyone contributes goodies for the pizza.  Let it rain, make a salad, and bake away for a new type of celebration minus the burgers, dogs, or whatever grilling you intended to do.

My favorite no-knead dough just was not cooperating so I abandon it and ended up making another favorite, Roberta’s, and that rose nicely so we had 4 nice pizzas…link to Roberta’s dough below.  I have never had problems with that recipe and it was good pizza night, beautiful rise on a damp day so the dough was stored in the fridge until about an hour before pizza was shaped and baked.

Friends are brought the sauce and cheese blend, for me I made arugula, fennel, radicchio salad along with a platter of roasted tomatoes and burrata, joining us a nice plate of olives and cheese to nibble on while we waited for pizza…though rainy we still had dinner on the screened porch and enjoyed a good bottle of Montepulciano wine, thanks, Janet!

The perky little salad of arugula, thinly sliced fennel, and thinly sliced radicchio was a perfect go with a pizza side salad and not at all complicated…dressing:  2-3 teaspoons of honey, the juice 1/2 of a lemon and a bit of the zest, sea salt and freshly ground pepper, 2 small cloves of garlic, smashed and minced, about 3 tablespoons of finely minced shallot, and 1/4 of EVOO.  Whisk until emulsified, taste, and add more lemon or oil to taste.  I had a couple of handsful of arugula, 1/4 of a head of a radicchio, and 1 small fennel bulb, toss together and lightly dress, taste then add more dressing if need be.

We didn’t complicate things at all, a simple pizza Margherita and a pepperoni was just the ticket to please all of us.
