2022 Goals for the Cooking Club

Happy New Year

This week’s theme at the cooking club is food goals for 2022 and I have a short list that starts out with what is in the the freezers, pantry and refrigerators before adding anything to them, do a little more dessert baking, get back to baking breads, and making fresh pastas again.

For a good start today I completed a dessert goal inspired by Ellie Krieger an Italian cheese cake, but of course I did not completely follow her recipe settling for whole milk ricotta, plain cream cheese, and corn starch instead of flour. Google for for Ellie’s recipe for “Ricotta Cheesecake with Fresh Raspberries”.

I am looking forward to a Sunday dinner with red sauce and, hmmmmm. Stand by for a freezer diving Italian dinner…
