Freezer Diving & What’s for Dinner

For the past week or so I have successfully managed to attack the freezer in search of what to finish off in the way of frozen sauces, soups, and cuts of meat, poultry, or seafood.

We enjoyed a great dish of cannelloni on Sunday thanks to a few containers of homemade sauces and previously made meatballs to have with the pasta, a forgotten French baguette was perfect for homemade pepper, lemon, and parmesan croutons for last night’s Caesar salad with crispy chicken tenders, and tonight I have planned dinner around a chuck roast and of all things, cranberries that seem to get lost after the holidays. I always buy more cranberries than we need for holiday recipes so that we can enjoy them long after and such a great addition to many dishes.

I’m not sure if my choice of a recipe for the roast a cranberry pot roast that I plucked from one if our guest chef’s files, Tieghan Gerard, qualifies as a”Healthy January” contribution, but it has to be a bit healthier by choosing egg noodles over potatoes, right? I would make this pot roast again, but who can explain why cranberries seem to vanish after Christmas?
