Get Well Soon Lentil Soup

“Pot Luck” comfort get well soon lentil soup for friends…an easy delicious pot of French lentil soup was the soup of the week and you can find a link to a basic recipe from Nigella below, of course I went beyond the recipe with additional ingredients. I added a hearty stock instead of water, a few more herbs, spices, celery, and garlic to make more of a soup than a side dish. I chose to add cubed ham towards the end of the cooking time, but a smoked sausage addition would also be a good choice or toss in a small smoked ham hock for a bit of a smoky flavor.

Serve with a great French salad, warm French rolls or bread, and a nice bottle of medium bodied Beaujolais or Syrah wine.
