Weekend Cooking – Smoked Chile-Tequila Glazed Chicken

Speaking of labor Day weekend instead of hitting the highway stay home and have a fabulous cookout with friends.

Running short on time or at least not enough time to prep the Primo grill and get a fire going, I used my stove top Nordic Ware smoker to smoke the chicken and then it was just a matter of finishing on the grill.  I found a good recipe for the rub and glaze in Cooking Light, gently adapted of course, but delicious and with the stove top smoker, no standing around adjusting the smoker temperature…I need to use this smoker more often!  We enjoyed a quick side dish of Spanish rice and a generous Italian salad, but for a cookout serve other fabulous side dishes with a Mexican flare…One addition to the rub and glaze a little chipotle chile powder to each for a little bit of smoke flavor.
